Baked Nachos and Guacamole Need To Know’s:

  1. Fresh avocados are the key here to combining and making the tastes come through.

  2. Cayenne Pepper can be subbed for Jalapeno if you can’t find fresh ones.

  3. The leftover onion from the guacamole can be roasted or sauteed with your squash for the nachos.

  4. I used squash in this recipe because it’s an excellent winter vegetable option. Play with what veggies are freshest and in season but winter can be tough. So squash is a good one!

  5. If you have fresh/hard avocados put them in a paper bag and close it two to four days prior to making your guacamole. Depending on how ripe they are will depend on how many days you need. They will get soft :)!

  1. For someone who wants to have a bit of “pub or taqueria” food but wants to enjoy it in a more clean manner.

  2. You can press the tortillas and bake or air fry them instead of deep fry. No loads of crema, sour cream, or queso that sometimes cover nachos and come with chips.

  3. This is a “cheat meal” for someone eating pretty clean but needs a little something different!

Baked Nachos and Guacamole have become a staple for me. I grew up thinking Mexican food and Nachos could only be greasy, filled with junk, and left you feeling stuffed. That’s what we have done to portion sizes in the US. This has created a shift for me to enjoy some “American Mexican” food without the cost of an overly full belly!
