Clean Eating Cooking Recipe: Balsamic Couscous Bowl

Mike Rudd is a health and wellness curator who creates healthy recipes based on minimal ingredients and utilizing whatever is in a kitchen! In this recipe I go through the fridge and pantry to concoct a Couscous bowl with veggies, feta, and balsamic vinegar!

I explain the summary items, ingredients, and process from turning a bunch of random items into one of my favorite new creations! This recipe requires less than 8 ingredients. Chopping veggies and boiling water are the toughest items to make, so even the most novice cook will look like a Michelin chef.

Balsamic Couscous Bowl Need To Know’s:

  1. You could substitute many of these ingredients for what you have in the fridge or available where you live.

  2. Couscous could be Quinoa or Rice. Feta could be Goat or Parmasen Cheese or a Vegan Cheese.

  3. How you make the veggies can also be varied depending on your cookware. Asparagus can be boiled or pan roasted. The zucchini’s can be air fried, roasted, or sauteed. You could also grate the Zucchini and drain them of their water.

Who is this recipe for?

  1. Anyone looking for a veggie packed meal on the go.

  2. This could also a great side dish to someone who eats meat.

  3. Going on a long hike or bike ride? Easy to stick inside of your pack and enjoy as a lunch break. Speaking of lunch healthy options are tough to find for office workers with limited time. Making a big batch of this on a day off work and then taking for lunch for three days works great. I would add in the feta cheese and balsamic each day individually if so.

This ancient grain bowl is easy to make, can utilize “leftovers” in your fridge when you don’t think you have anything to make, and is one of many recipes I utilize consistently to eat clean with simple ingredients quickly. Balsamic Couscous Bowls are one of many ways to a healthier eating version of you!
